What you'll do:
This zoom class is perfect to celebrate the festivity of love through food. These ravioli hearts and candy shapes are as delicious as they are pretty. They are filled with truffle or mushroom ricotta Parmigiano. In this class, we will make 2 different pasta doughs. While the dough is resting, we will be making our filling. Together we will create a beautiful pasta sheet and create the shape of hearts and “caramelle”, which means candies in Italian. We will also make a brown butter sage sauce to go with our ravioli.

Ingredients for pasta:
00 pasta flour (if you can't get any just use all purpose flour)
Beet powder or 1 roasted red beet
Ingredients for the filling:
1tbs truffle paste or 1lb of sautee mushrooms
1 15oz tub whole milk ricotta cheese, drained in cheesecloth for 15 minutes.
