This class will teach you how to make a delicious Italian dinner right from your home; spaghetti carbonara, Caesar salad with homemade croutons and orange, hazelnut biscotti. I love serving this meal up to family or on special occasions for guests. Carbonara can be tricky, but I'll teach you a foolproof way to have creamy, delicious pasta every time. Of course, I'll also provide lots of make ahead tips, so that if you do decide to host with this menu, you'll be able to enjoy your guests instead of being in the kitchen the whole night.

What we'll do in the class: 

1. Learn how to make a homemade Caesar dressing and croutons for the best version of this classic salad.
2. Learn how to make a fool-proof spaghetti carbonara for a crowd.
3. Learn how to make biscotti and lots of ways to customize them with your favorite ingredients to make them your own.
4. Learn how to prep all of these recipes in advance so that you only have minimal cooking before serving up this meal.

Prep Needed: Have all ingredients and equipment ready before class.

Ingredients Needed:

Produce
1 head garlic
1 lemon
2 romaine hearts
1 bunch scallions/green onions 1 large orange

Dry Goods
1 jar extra virgin olive oil***
Kosher salt (I love Diamond Crystal Brand)
Freshly ground black pepper
1 jar anchovy fillets in oil (omit if vegetarian) ***
2 teaspoons Dijon mustard ***
1 pound spaghetti ***
1 baguette
1 1/2 cups blanched hazelnuts ***
1 cup all-purpose flour
1/4 teaspoon each baking soda and powder
1/4 teaspoon ground cinnamon
1/4 cup light brown sugar
1/4 cup granulated sugar
1/2 teaspoon pure vanilla extract

Meat
4 ounces guanciale, pancetta or bacon - can be diced or whole (omit if vegetarian) ***

Dairy
7 large eggs
1 block or grated Parmesan (8 ounces) ***
1/2 stick unsalted butter, room temperature
