Agnolotti are pasta pillows filled with a filling. The pasta style originated in the piedmont region of Italy. In this pasta class, we will make 2 different pasta doughs, one colored with your choice of superfood and the other plain. While the dough is resting, we will make ricotta and spinach filling for our agnolotti. Together we will create a beautiful pasta sheet, and create the shape agnolotti. This class is best suited for people that have at least made pasta once before.
Food Items Checklist:
Ingredient for pasta
- 00 pasta flour (if you can't get any just use all purpose flour)
- 15 eggs
- Olive oil
- Salt
- Garlic cloves
- Only use one of these superfoods for color
- 1/2 Bunch parsley or spinach
- Paprika
- Beet powder or 1 roasted red beet
- Activated charcoal
Ingredients for the filling
- 1 15oz tub whole milk ricotta cheese, drained in cheesecloth for 15 minutes.
- 1 cup grated parmesan cheese
- 3 to 4 cups spinach
- ½ tsp nutmeg
- Salt, pepper
For the sauce
- Butter
- Sage
- 1 Lemon
Equipment:
- Pasta machine
- Food processor
- Rolling pin
- Bench scraper
- Pasta cutter or just use your pizza cutter
- Pipping bag if you have one
- ziplock bag
- Wire rack or a floured baking sheet
