In this pasta class we will make 2 different pasta doughs, with your choice of superfoods, or herbs. While the dough is resting, we will make a pistachio ricotta pesto filling for our caramelle. Together we will create a beautiful pasta sheet and create the shape “caramelle”, which means candies in italian.

Food Items Checklist:
Ingredients for pasta:
- 8 cups of 00 pasta flour (if you can't get any just use all-purpose flour)
- 12 eggs
- Olive oil
- Salt
- Only use one or two of these superfoods:
- Bunch of parsley
- Paprika
- Turmeric
- Beet powder or 1 roasted beet
- Activated charcola
- Roasted red pepper
Ingredients for the filling:
- 1/2 cup pistachio or pine nuts
- 3 cups basil
- Garlic
- 1 15oz tub os whole milk ricotta cheese, drained in cheesecloth for 15 minutes
- 1.5 cupe of parmesan cheese
Equipment:
- Pasta machine
- Food processor
- Blender
- Rolling pin
- Bench scraper
- Fork
- Pasta cutter wheel or just use your pizza cutter
- 3 ziplock bags
- Wire rack or a floured baking sheet
