Description: Originating from Goa, the name Vindaloo comes from the Portuguese vinha d’alhos which translates to “meat in wine”. The Portuguese sailors shared the technique of marinated pork with wine in barrels with the locals. The dish was modified by the Goans by adding local spices, replacing the pork with the more common chicken or lamb, and swapping out the wine with a mixture of palm vinegar and kokum, pulp from a sour fruit similar to tamarind.
