A Dutch baby is one of those dishes that is equally delicious as it is impressive. It's magic watching this pancake rise in the oven.
Together we will cook together, step by step, the blueberry compote, lemon crème anglaise and Dutch baby. Throughout the class I will give substitutions, so you can customize this recipe however you'd like, as well as provide make ahead instructions, so that this can be an easy go-to recipe whenever you are hosting a breakfast or brunch for a crowd.
I make these all the time especially around the holidays, and because I prep it all in advance I don't miss a thing.
What we'll do in the class:
1. Learn how to a make a Dutch Baby and other fillings you can use to make it sweet or savory. 2. Learn how to make a crème anglaise which can be used for other dessert sauces or can become the base to a homemade ice cream. 3. Learn how to make a blueberry compote, and all the ways you can customize it with other fruit and flavors. 4. Learn how to prep all these components in advance, so you can enjoy brunch with your family or guests.
Prep Needed: Have all ingredients and equipment ready before class.
Ingredients Needed:
Produce: 2 large lemons 1 pint (2 cups) blueberries Dry Goods 1/2 cup granulated sugar Kosher salt (Diamond Crystal brand preferred) 1 1/4 cup all-pupose flour 1/2 teaspoon ground cinnamon 2 tablespoons powdered sugar Dairy: 1 1/4 cup half and half 1 1/4 cup whole milk 8 large eggs 1/2 stick unsalted butter Specialty Equipment: Cutting board Chef knife Side towel Measuring cups and spoons 2-cup liquid measuring cup 1 small saucepan 1 medium saucepan 1 oven-safe 10-inch saute or cast iron pan 2 small bowls 2 medium bowls 1 whisk 1 rubber spatula 1 ladle 1 zester 1 fine mesh strainer
