Take a virtual class with me and learn how to create a showstopping elegant cake with a beautiful dark chocolate ganache drip topped with a gorgeous chocolate sail

How to Participate: 

This class is hosted online. Once you book, you’ll receive an email with a link and details on how to join. I'll be baking from my home in the English countryside. Anyone with the ingredients can participate from their own kitchen.

What you'll do: I will show you how to layer, crumb coat and cover a layer cake with smooth vertical sides. I will then show you how to make chocolate ganache and how to get the perfect consistency for a beautiful ganache drip to decorate your cake!  I will also show you how to make a gorgeous chocolate sail to top your cake. Have the ingredients listed below ready, and you can make it along with me! I will answer all your questions along the way so that you can make these confidently on your own to make impressive looking cakes.

What you'll need:

Food Items:

  • Ideally 3x cake layers but 2x cake layers is fine
  • Chocolate buttercream at room temp (450g soft butter, 800g icing sugar, 85g cocoa powder, 100g milk, 2tsp vanilla extract, 1tsp salt all mixed together in a stand mixer for about 5mins until well combined, thick and fluffy) - or any colour buttercream of your choice sufficient to layer and cover a 3 layer cake
  • Dark chocolate 150g (separated into 100g and 50g)
  • Double/heavy cream 50g
  • Milk 1/2tbsp

  • Cake board
  • Turntable
  • Spatula
  • Set square/cake scraper/firm ruler
  • Small bowls
  • Spoons
  • Tall water glass
  • Microwave
  • Parchment paper
  • Piping bag
  • Large measuring jug/bowl
  • Room in freezer for jug/bowl
  • Scissors
