Chicken Chettinad is loaded with some of the bold spices typical to cuisine like fennel, pepper, cumin, cardamom, and cloves. Coconut is a popular ingredient and it is used in a variety of different ways, raw, dried, or the flesh is blended with water to create fresh coconut milk. The sweet flavor of coconut helps balance the heat of the spices and gives texture to the curry. The longer you cook this dish, the more the flavors infuse into the chicken.
