Thailand is known for their many different curry pastes, but Central Thailand’s green version is touted as the spiciest of the bunch. It gets its vibrant green color from the use of young, fresh green chilies, kaffir lime leaves and herbs. We temper the heat with a healthy dose of creamy coconut milk and a touch of brown sugar, but give you a range for the curry paste so you can control how hot you want your dish.
